Why You’ll Love This Recipe
- Effortless: No baking required – just melt, mix, and chill.
- Customizable: Swap out ingredients to create your favorite flavour combinations.
- Perfect for Gifting: A crowd-pleaser that’s ideal for parties, holidays, or special occasions.
Ingredients
-
1kg milk or dark chocolate (or a mix)
-
40g (2 tbsp) coconut oil (optional, for easier slicing)
-
400g marshmallows (halved or use mini marshmallows)
-
40g (½ cup) desiccated coconut
-
220g raspberry lollies (halved, or use your favorite soft lolly)
-
150g (1 cup) peanuts (or other nuts like cashews or pistachios)
Directions
Line a 25cm x 35cm baking tin with baking paper.
Melt the Chocolate. Place the chocolate and coconut oil (if using) into a large, microwave-safe bowl. Heat in 30-second bursts on 50% power, stirring in between, until smooth and fully melted.
Combine Ingredients. Add the marshmallows, desiccated coconut, raspberry lollies, and peanuts to the melted chocolate. Stir until the ingredients are evenly coated.
Set the Mixture. Pour the mixture into the prepared tin, spreading it evenly with a spatula. Refrigerate for at least 2 hours, or until fully set.
Slice and Serve. Remove from the fridge 30 minutes before slicing to prevent cracking. Use a sharp knife (warm it under hot water and dry it for cleaner cuts) to slice into squares or bars.
Recipe Note
Storage: Keep in an airtight container in the fridge for up to 1 month or freeze for up to 3 months.
Customizations: Use white chocolate for a sweeter variation.
Replace nuts with dried fruits or omit them entirely for a nut-free version.
Try other add-ins like Turkish delight, glacé cherries, or gummy bears.
Gifting Idea: Wrap pieces in cellophane or place them in decorative boxes for a thoughtful homemade gift.
