These homemade chewy muesli bars are naturally sweetened and packed with your choice of nuts, seeds and dried fruit for a nutrient-dense, satisfying snack. Perfect for on-the-go breakfasts, lunchboxes, or afternoon energy boosts. No baking required!
Ingredients

1 ½ cups rolled oats (not quick oats)

2 cups add-ins (roughly chopped nuts, seeds, dried fruit, coconut, choc chips)

½ cup smooth natural peanut butter (or almond butter)

½ cup honey
Directions
1. Mix the dry ingredients – In a large microwave-safe bowl, combine rolled oats and your chosen 2 cups of nuts, seeds, and dried fruit.
2. Prepare the glue – In a saucepan over low heat, stir together the peanut butter and honey. Keep stirring for about 5 minutes until it forms a thick, caramel-like consistency. Do not let it burn—stay close and stir constantly.
3. Combine – Immediately pour the hot peanut butter mixture over the dry ingredients. Stir vigorously until all dry ingredients are evenly coated. If it becomes too difficult to mix, microwave for 20 seconds to soften.
4. Press into a pan – Line a 20cmx20cm (8x8-inch pan with baking paper. Transfer the mixture and press it down firmly using the back of a spoon or your hands.
5. Chill and cut – Refrigerate for at least 2 hours to set. Once firm, cut into 10 bars. Store in an airtight container in the fridge for up to two weeks.
Recipe Note
Storage: Keep in the fridge for up to 2 weeks for the best texture. They will soften if stored at room temperature.
Nut-free version: Swap out nuts for more seeds and dried fruit. Use sunflower seed butter instead of peanut butter.
