A vibrant botanical syrup made from butterfly pea flowers, crafted in-house by our chefs.

 

Butterfly pea flowers have long been loved for their deep indigo colour and their ability to transform drinks into something a little magical. We gently steep the flowers to create a syrup with a subtle botanical flavour and a striking natural colour that shifts from deep blue-purple to pink when citrus is added.

 

The flavour is delicate and lightly floral, making it the perfect base for cocktails, mocktails, sodas, and sparkling drinks.

 

It turns every drink into a bit of an occasion.

 

How to Use

 

Add a splash to soda water over ice.

 

Mix with lemonade for a sweeter drink.

From Our Kitchen

 

We first started making butterfly pea syrup for our cocktail menu.

 

We loved the natural colour, but what really kept us coming back was the theatre of it — watching the deep purple syrup transform when citrus is added.

 

Now we make it in small batches in our kitchen, so you can create the same experience at home.

This is one of our favourite ingredients to work with.

 

Our go-to is a Butterfly Pea Lemonade — butterfly pea syrup, fresh lemon juice, ice, and soda water. We also love using it in gin cocktails and sparkling spritzes where the colour transformation becomes part of the experience.
