Our Herbes de Provence blend is exceptionally flavourful and fragrant because we carefully select herb varieties for their flavour profiles and local adaptability. We hand-pick the herbs from our family farm and my Mum’s country cottage garden. Grown with environmental care and harvested at their peak freshness, the herbs are dried using a unique technique. We combine them with high-quality Australian sea salt and dry them naturally in our sunroom. This natural process captures and preserves the herbs essential oils and rich flavours, unlike the industrial methods (that involve high heat to remove moisture quickly) that diminishes their flavour and aroma.
Our chefs love this blend for its exceptional quality and versatility. While Herbes de Provence is typically used in Provençal cuisine, this blend is incredibly versatile, enhancing the flavour of meats, vegetables, soups and sauces. Our blend includes basil, savory, tarragon, thyme, rosemary, and marjoram. Grown for flavour, not production.

Our Favourite Ways to Use Herbs De Provence Salt:
- Infuse Olive Oil: Mix our Herbes De Provence blend into olive oil to create a flavourful dipping oil for bread or a base for salad dressings.
- Season Grilled Fish: This blend works so perfectly on grilled fish (our favourite is Salmon) or seafood. It adds such a fresh, flavourful taste.
- Flavour Rice or Quinoa: Sprinkly into rice or quinoa while cooking to infuse the grains with a subtle herbal flavour.
- Make Herb Butter: We always use a herb butter in our restaurant (on top of steaks, spead on to baked breads and cooked through vegetables). To make a simple version simply blend Herbes De Provence into softened butter.
