COLD SMOKED RAW HONEY
A rich, smoky honey crafted in small batches and cold smoked in-house by our chefs.
For years, our chefs have had a passion for smoking — spending countless hours experimenting with different woods, temperatures, and techniques to create flavours that feel both rustic and refined. This honey is one of those creations.
Using our cold smoker, we gently smoke raw honey over many hours, allowing it to take on a subtle smokiness while preserving the natural floral character and richness of the honey itself.
The result is something truly unique — sweet, smoky, complex, and beautifully balanced.
How to Use
Spread generously over warm buttered sourdough.
Drizzle over baked brie, camembert, or aged cheddar.
Brush onto roast pork, chicken, or vegetables before cooking.
Stir through dressings and marinades for a subtle smoky sweetness.
Add to grazing boards for something unexpected.
From Our Kitchen
This honey began as an experiment in our chef's smoker.
We've always had a passion for smoking food — from meats and vegetables to butter and cocktails. One day, we wondered what would happen if we applied the same slow, gentle process to raw honey.
The result was better than we imagined.
The cold smoking process adds depth and warmth without overpowering the natural character of the honey, creating something that's both familiar and completely new.
Behind the Bar
This is one of our favourite ingredients to work with.
We love using it in smoked old fashioneds, whisky sours, and house cocktails where its subtle smokiness adds depth and complexity without overwhelming the drink.
It's also incredible stirred through hot water with lemon on a cold evening.
